Crunchy Cheese Croissants

Ingredients
- 50g Kerrygold® Mature White Irish Cheddar 180g
- 1 croissant
- 1-2 slices streaky bacon
- 1 egg
Directions
- Heat a medium sized non-stick pan over medium high heat. Once hot, sprinkle the grated cheese in the dry pan in an even layer.
- While the cheese is melting, get another pan on medium high heat. Once hot, drizzle with a bit of oil then fry the bacon and egg to your liking, season the egg to taste.
- Once the cheese has melted and is bubbling, cut the croissant in half then place both halves on top of the cheese, cut side down and back-to-back so that you’ll be able to fold it closed.
- Using a spatula, remove the cheesy croissant from the pan and place cheese-side-up on your plate. Add the cooked bacon and fried egg, then fold over the cheese and croissant to close the sandwich
