American Burgers with Caramelised Onions

Ingredients
- 400 g cherry tomatoes
- 2 tbsp oil
- 2 tbsp sugar
- 50 ml white wine vinegar
- ½ tsp dried oregano
- Salt
- About 80 g rocket
- 2 large tomatoes
- 6 pickles
- 4 red onions
- 2 tbsp KERRYGOLD® IRISH CREAMERY BUTTER 227g
- Freshly ground black pepper
- 800 g minced beef
- 4 burger buns
- 4 slices Kerrygold® Mature Red Irish Cheddar Slices 180g
Directions
- Wash and halve the cherry tomatoes.
- Heat the oil in a saucepan over medium heat. Add the cherry tomatoes and 1 tbsp sugar, and sauté for 2–3 minutes until they begin to soften.
- Deglaze the pan with the vinegar, stirring to combine and lift any caramelisation at the bottom.
- Add the oregano and salt to taste, mix well.
- Reduce the heat to medium-low and simmer gently for about 10 minutes, until the mixture has thickened slightly and the flavours have developed.
- While the cherry tomatoes are simmering, clean and wash the lettuce, then shake dry and set aside.
- Wash the beef tomatoes and slice them thinly.
- Drain the pickles and cut them lengthwise into thin slices.
- Peel the onions and slice into thin rings.
- Melt the butter in a pan over medium heat. Add the onions and cook for about 5 minutes, stirring occasionally, until softened and lightly golden.
- Sprinkle in 1 tbsp sugar and continue cooking, stirring, until the onions are caramelised. Season lightly with salt, then transfer to a plate and allow to cool.
- Blend the tomato mixture until smooth, then season with salt and pepper to taste. Set aside to cool.
- Season the minced beef with salt and pepper, then shape into 4 evenly sized patties.
- Grill on a hot barbecue or in a pan for about 4 minutes per side, until nicely browned.
- Reduce the heat and place a slice of Kerrygold Mature Red Cheddar cheese on each patty just before finishing and allow it to melt.
- Spread a generous layer of the tomato sauce over the bottom halves of the buns and layer with sliced tomatoes, rocket, a patty, pickles, and caramelised onions.
- Serve immediately with any extra tomato sauce on the side.
