American Burgers with Caramelised Onions

Directions

  1. Wash and halve the cherry tomatoes.
  2. Heat the oil in a saucepan over medium heat. Add the cherry tomatoes and 1 tbsp sugar, and sauté for 2–3 minutes until they begin to soften.
  3. Deglaze the pan with the vinegar, stirring to combine and lift any caramelisation at the bottom.
  4. Add the oregano and salt to taste, mix well.
  5. Reduce the heat to medium-low and simmer gently for about 10 minutes, until the mixture has thickened slightly and the flavours have developed.
  6. While the cherry tomatoes are simmering, clean and wash the lettuce, then shake dry and set aside.
  7. Wash the beef tomatoes and slice them thinly.
  8. Drain the pickles and cut them lengthwise into thin slices.
  9. Peel the onions and slice into thin rings.
  10. Melt the butter in a pan over medium heat. Add the onions and cook for about 5 minutes, stirring occasionally, until softened and lightly golden.
  11. Sprinkle in 1 tbsp sugar and continue cooking, stirring, until the onions are caramelised. Season lightly with salt, then transfer to a plate and allow to cool.
  12. Blend the tomato mixture until smooth, then season with salt and pepper to taste. Set aside to cool.
  13. Season the minced beef with salt and pepper, then shape into 4 evenly sized patties.
  14. Grill on a hot barbecue or in a pan for about 4 minutes per side, until nicely browned.
  15. Reduce the heat and place a slice of Kerrygold Mature Red Cheddar cheese on each patty just before finishing and allow it to melt.
  16. Spread a generous layer of the tomato sauce over the bottom halves of the buns and layer with sliced tomatoes, rocket, a patty, pickles, and caramelised onions.
  17. Serve immediately with any extra tomato sauce on the side.
