Heart Burger with Rocket and Paprika Chutney

Ingredients
For the Burger Buns
- 650g wheat flour
- 60g Kerrygold Naturally Softer Irish Butter
- 25g fresh yeast
- 240ml milk
- 125ml water
- 2 egg yolks
- 2 tbsp sugar
- 1 tsp salt
- 1 egg yolk
- 1 tsp milk
- 2 tbsp sesame seeds
For the Patties
- 900g ground beef
- Salt & Pepper
For the Chutney
- 1 onion
- 1 large red pepper
- 1 large yellow pepper
- 60g sugar
- 100-125ml apple cider vinegar
- 1 chilli pepper
- 2cm ginger
- Salt & pepper
- Kerrygold Naturally Softer Irish Butter
Also
- 3-4 tbsp Kerrygold Naturally Softer Irish Butter
- Rocket
- 12 slices Kerrygold Mature Cheddar
Directions
For the Chutney
Peel and finely dice the onion and peppers. Heat some butter in a saucepan and saute the onions. Finely grate the ginger and chop the chilli pepper and add to the onions. Allow to sweat briefly.Now add the sugar and let it caramelize for 2-3 minutes.
Deglaze with the vinegar and simmer for 3-4 minutes, then add the diced paprika and let the chutney simmer for 20-25 minutes.
For the Burger Buns
Put the flour in a bowl. In a saucepan, heat the milk together with the water and allow to cool slightly again. The mixture should be warm to the touch.Now add the sugar and the yeast to dissolve while stirring. Add the yeast-milk mixture together with the egg, salt and soft butter to the flour and knead with the food processor or by hand for 4-5 minutes until smooth but slightly sticky.
The dough should be 2-3cm thick. Cut out the bread in the shape of a heart using a cutter approximately 10cm in size. Cover and allow to rise for 30 minutes.
Meanwhile, preheat the oven to 200° C top/bottom heat. Mix the egg yolk with the milk, brush the buns with it and pour the sesame seeds over and bake on the middle rack for 20-25 minutes.
For the Patties
Put the ingredients in a bowl and kneed them together well. Then shape the six patties into hearts (slightly larger than the buns).To finish, cut the buns open and brush with butter and place on the grill or in a large pan. After turning them, put the cheese on them and allow them to melt.
Now put some rocket on the lower part of the bun, place a patty on top and put some chutney on the patty. Place the lid on the bun and you are ready to dig in!
