Kerrygold Red Cheddar & Bacon Burger

Ingredients
- 1 kg ground beef
- 1 tsp salt
- 1 tsp coarsely ground black pepper
- ½ tsp cayenne pepper
- 90g KERRYGOLD® IRISH CREAMERY BUTTER 227g
- 1–2 tbsp burger sauce
- FOR THE SAUCE
- 1 red onion
- 1 tbsp olive oil
- 200 g can of chopped tomatoes
- 200 g tomato paste
- 1 tbsp brown sugar
- 1 tsp honey
- 100 ml water
- 60 ml apple cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- ½ tsp cayenne pepper
- FOR ASSEMBLY
- 200g, sliced Kerrygold® Mature Red Irish Cheddar 200g
- 12 slices bacon
- 2 red onions
- 6 burger buns
- 100 g cherry tomatoes
- Lettuce of your choice
Directions
- Finely chop the onion and sauté in olive oil until soft. Deglaze with the tomatoes and water. Add the remaining sauce ingredients and blend until smooth.
- Simmer gently for 60 minutes, then further season to taste.
- Season the ground meat with salt, pepper, and cayenne pepper and mix well. Add 1 tablespoon of the sauce and combine.
- Shape into 6 burger patties and let them rest for 30 minutes.
- Heat butter in a pan and cook the patties for 3–4 minutes per side, depending on thickness. Toward the end, place slices of Kerrygold Red Cheddar on top and let them melt. This also works well on a grill.
- Fry the bacon until crispy.
- Briefly toast the buns and spread the sauce on both halves and add lettuce leaves.
- Assemble the burger with the patties, bacon, halved tomatoes, and onions.
