Ingredients

  • 230g cream cheese, softened
  • ¾ cup Thousand Island dressing
  • ½ cup sour cream
  • 200g shredded Kerrygold Dubliner
  • 2 cups corned beef, diced
  • 1 cup sauerkraut, drained well
  • Parsley for garnish

Directions

  1. In a medium bowl, mix cream cheese, Thousand Island dressing and sour cream until smooth.
  2. Stir in Kerrygold Dubliner Cheese, corned beef and sauerkraut.
  3. Transfer to a 20-cm baking dish and bake for 20-30 minutes or until cheese is melted and dip is bubbling.
  4. Garnish with parsley and serve with crackers.
