Tomato & Rocket Ciabatta with Balsamic Glaze

Ingredients
- 1 ciabatta
- 2-3 tablespoons KERRYGOLD® IRISH CREAMERY BUTTER 227g
- 2 garlic cloves
- 1 large beef tomato
- 100–150 g rocket
- 200g Kerrygold® Dubliner® Vintage Slices 175g
- 2–3 tbsp balsamic glaze
Directions
- Slice the ciabatta in half horizontally. Spread the cut sides generously with butter.
- Heat a pan over medium heat and toast the bread faced down, until golden and crisp.
- Peel the garlic cloves and rub them over the warm toasted surfaces to add a subtle garlic flavour.
- Wash and dry the tomato and rocket. Slice the tomato.
- Layer the rocket onto the ciabatta, followed by the Cheddar, and finish with the tomato slices.
- Season with salt and freshly ground black pepper. Drizzle with balsamic glaze just before serving for a sweet and tangy finish.
