Tomato & Rocket Ciabatta with Balsamic Glaze

Directions

  1. Slice the ciabatta in half horizontally. Spread the cut sides generously with butter.
  2. Heat a pan over medium heat and toast the bread faced down, until golden and crisp.
  3. Peel the garlic cloves and rub them over the warm toasted surfaces to add a subtle garlic flavour.
  4. Wash and dry the tomato and rocket. Slice the tomato.
  5. Layer the rocket onto the ciabatta, followed by the Cheddar, and finish with the tomato slices.
  6. Season with salt and freshly ground black pepper. Drizzle with balsamic glaze just before serving for a sweet and tangy finish.
