Sheet Pan Balsamic Steak & Potatoes with Kerrygold Garlic Butter
Ingredients
- 2kg flank steak, patted dry
- 1kg baby potatoes, halved
- 2 tsp balsamic vinegar
- 500g fresh broccoli stems
- 2/3 baby onions cut into halves
- 3 garlic cloves, minced and divided
- 1/2 cup grated parmesan cheese
- 1/2 cup Kerrygold Original Irish Butter
- 3 tsp Olive Oil
- 1 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, for garnish
For the Kerrygold Garlic Butter
- 1 cup Kerrygold Original Irish Butter, room temperature
- 2 garlic cloves, minced (or 1 tsp garlic powder)
- 2 tbsp freshly chopped parsley
- Salt to taste

1. Preheat the oven to 180°C.
2. Place the potatoes on a baking sheet and toss with one tablespoon olive oil, 1/3 of the minced garlic, and 1/2 teaspoon salt.
3. Bake potatoes for 15-20 minutes or until tender and lightly browned.
4. While the potatoes are baking, combine the remaining minced garlic, 1/4 cup parmesan cheese, 2 teaspoons balsamic vinegar, 1 teaspoon oil and 1/2 teaspoon salt and black pepper into a small bowl. RUb over both sides of the steak.
5. Remove pan from oven and turn oven to grill setting. Move the potatoes to one side of the baking sheet. Place the broccoli stems on the other side of the sheet and toss with 1 teaspoon oil, leaving enough room down the middle for the steak.
6. Place the steak on the sheet pan between the potatoes and broccoli, return the pan to the oven and grill for 8-10 minutes, flipping the steak halfway through cooking time or until the steak is cooked to your liking. (This should give you a medium-rare steak)
7. During grilling, if the potatoes are browning too quickly, lay a piece of foil over the potatoes.
8. For the onions, in a frying pan, add 1/2 teaspoon oil and garlic. Then fry your baby onions until golden.
9. Remove the pan from the oven when the steak is done to your liking. Sprinkle the remaining 1/4 cup shredded cheese over potatoes. Garnish with chopped parsley, coarse salt, and cracked black pepper.
10 Finish off with Kerrygold Garlic Butter.
