Mealie Bread
Ingredients
- 2 large eggs
- 1 can creamstyle sweetcorn
- 5ml salt
- 60ml full-cream milk
- 30 g Kerrygold Pure Irish Salted Butter
- 625 g self-raising flour
- 250 ml (grated) Kerrygold Mature Cheddar
- 5 ml paprika
- 5 ml dried mixed herbs
- Kerrygold butter to spread

- Preheat oven to 170 degree Celsius.
- Add eggs, sweetcorn and salt to a large mixing bowl.
- Heat milk and butter. (Do not boil.) Add to the above mixture. Blend together.
- Add in flour, paprika, dried herbs and half the cheese. Mix well.
- Line a loaf tin with baking paper and pour batter in.
- Bake for 45-50 mins or until it is golden brown. Test to see if it’s done with a skewer.
- Remove from oven.
- Brush with melted Kerrygold butter while hot.
- Let cool slightly and slice. Enjoy.
