Ingredients

  • 400 ml maize meal
  • 1 can creamstyle sweetcorn
  • 1 cup grated Kerrygold Mature Cheddar
  • Tomato chutney (See below)
  • 1 teaspoon Italian herbs
  • 30 g Kerrygold Pure Irish Salted Butter
  • For the tomato chutney:

  • 1 tablespoon olive oil
  • 1 can tomato onion mix
  • ½ teaspoon dried cumin
  • ½ teaspoon dried coriander
  • ½ teaspoon salt
  • 1/2 teaspoon red chilli powder
  • (Cook all ingredients together for 10 minutes on the stove)

  1. Preheat oven to 180 degrees.
  2. Prepare pap/ maize meal as per package instructions. Don’t let it get too dry.
  3. Add Kerrygold butter. Stir it in.
  4. Add 1 tin creamstyle sweetcorn to maize meal. Stir it in.
  5. Empty mixture into an ovenproof dish and level it.
  6. Spread tomato chutney over. 
  7. Sprinkle grated cheese.
  8. Sprinkle herbs over.
  9. Bake in oven for 15 minutes.
  10. Serve with braai. (It’s delicious on its own too)
