- Combine the flour and salt in a large mixing bowl. Add the oil and rub into the flour.
- Add the water into the flour mixture and stir until the dough comes together. Knead the dough for 5 minutes, then cover the bowl and set it aside for 1 hour.
- After the hour, divide the dough into 8 equal portions.
- Take one portion at a time, dust a flat surface with flour and roll it out as thinly as possible.
- Use a pastry brush and brush the dough with the butter (about 1 tablespoon). Sprinkle some flour on top and pleat the dough like a fan.
- Roll the dough starting from one end until it forms a round disc. Tuck the other end underneath. Repeat the process
- Place the discs on a flat plate, cover with clingwrap and refrigerate for 30 minutes
- Dust a surface with flour and roll the dough into a large circle, about 20cm in diameter
- Warm a pan on high heat. Brush any excess flour off the dough and cook for about 2-3 minutes per side. Brush each side with more melted butter
- Use some paper towels or a clean kitchen towel and carefully crush the roti so it flakes. Place on a wire rack. Best served immediately
