Ingredients

  • 3 cups cake wheat flour
  • 1/2 teaspoon salt
  • 2 tablespoon oil
  • 1&1/4 warm water
  • ½ cup/125 gram (softened, plus more for brushing the roti) Kerrygold Pure Irish Salted Butter

Directions

This recipe makes a crispy, buttery Indian flatbread.

  1. Combine the flour and salt in a large mixing bowl. Add the oil and rub into the flour.
  2. Add the water into the flour mixture and stir until the dough comes together. Knead the dough for 5 minutes, then cover the bowl and set it aside for 1 hour.
  3. After the hour, divide the dough into 8 equal portions.
  4. Take one portion at a time, dust a flat surface with flour and roll it out as thinly as possible.
  5. Use a pastry brush and brush the dough with the butter (about 1 tablespoon). Sprinkle some flour on top and pleat the dough like a fan.
  6. Roll the dough starting from one end until it forms a round disc. Tuck the other end underneath. Repeat the process
  7. Place the discs on a flat plate, cover with clingwrap and refrigerate for 30 minutes
  8. Dust a surface with flour and roll the dough into a large circle, about 20cm in diameter
  9. Warm a pan on high heat. Brush any excess flour off the dough and cook for about 2-3 minutes per side. Brush each side with more melted butter
  10. Use some paper towels or a clean kitchen towel and carefully crush the roti so it flakes. Place on a wire rack. Best served immediately
Tip: The quantity of water is merely a guide, you may need to adjust the amount of water. Various factors can affect the amount of water required
