  1. Ensure your butter is soft.
  2. Place the butter, together with the sugar, into a mixing bowl. Use a hand mixer to beat until smooth.
  3. Add the flour and use a wooden spoon to incorporate, then using your hands, gently knead to form a smooth dough.
  4. Grease a baking tin with a little butter or non-stick spray, then place the dough into the baking tin and press down to cover.
  5. Use a pizza cutter to form your cutting lines (don’t cut through), then lightly pierce each “slice” of the dough with a fork.
  6. Sprinkle with castor sugar and bake at 170 C for 30 to 40 minutes.
  7. Remove shortbread from oven and cut on the lines while it’s still hot.
  8. Let rest until cool, serve and enjoy.
