Ingredients

  • 1/4 cup Kerrygold Original Irish Butter, melted
  • 1/2 cup honey
  • 2/3 cup brown sugar
  • 2 to 3 tbsp Dijon mustard
  • Whole cloves
  • 1.5kg - 2kg fully cooked gammon

1. Gather the ingredients and preheat the oven to 180°C.

2. Stir the melted butter, honey, brown sugar, and mustard until smooth then set aside.

3. Place the gammon in a roasting pan large enough to hold it with room left over on the sides.

4. Score the top surface of the ham with a diamond pattern.

5. Push a whole clove, point side down, into the centre of each diamond in the gammon.

6. Spoon half of the butter mixture over the gammon.

7. Roast the gammon, uncovered, for 20 minutes, then spoon over the rest of the butter mixture.

8. Roast for another 20 minutes, then baste the gammon with the pan drippings.

9. Roast for another 20 minutes, until the ham reaches 180°C and is glazed. Baste every 20 minutes.

10. Serve with roasted pineapples and enjoy!
