  1. Preheat the oven to 200 °C top/bottom heat.
  2. Sieve the flour, baking powder and salt into a bowl.
  3. Cut the butter into small pieces.
  4. Add the sugar, egg and butter to the flour mixture and mix quickly. The dough should just about hold together. Small pieces of butter in the dough are perfectly ok.
  5. Using lightly floured hands, shape the dough into six roughly equal-sized balls and place them side by side, a little apart, on a baking tray lined with baking paper.
  6. Bake in a hot oven for approx. 15 minutes until golden brown. Remove and leave to cool on a wire rack.
  7. Wash and slice the strawberries. Cut the scones in half and spread with cream cheese. Spread the jam on top and sprinkle with mint or pistachios as desired.
