Cream Cheese Scones
Serves 6 scones
Ingredients
- 240g white flour
- 1 ½ tsp baking powder
- ½ tsp salt
- 60g cold KERRYGOLD® BUTTER STICK 100G
- 60g sugar
- 1 egg, beaten
- 100ml buttermilk
- 100g strawberries
- 1 tub KERRYGOLD® NATURAL CREAM CHEESE 150G
- Approx. 6 tbsp strawberry jam
- Mint and chopped pistachios to taste
Directions
- Preheat the oven to 200 °C top/bottom heat.
- Sieve the flour, baking powder and salt into a bowl.
- Cut the butter into small pieces.
- Add the sugar, egg and butter to the flour mixture and mix quickly. The dough should just about hold together. Small pieces of butter in the dough are perfectly ok.
- Using lightly floured hands, shape the dough into six roughly equal-sized balls and place them side by side, a little apart, on a baking tray lined with baking paper.
- Bake in a hot oven for approx. 15 minutes until golden brown. Remove and leave to cool on a wire rack.
- Wash and slice the strawberries. Cut the scones in half and spread with cream cheese. Spread the jam on top and sprinkle with mint or pistachios as desired.
