  1. Begin by rinsing all of the vegetables with water.
  2. Chop the aubergine, courgette, peppers, beans and mushrooms into slices. Cut the corn on the cob into 3-4 equal pieces.
  3. Melt the butter in a saucepan and combine with a teaspoon of dried mixed herbs and set aside.
  4. Drizzle the melted herb butter over the chopped vegetables and season with some salt and pepper. Place under the grill until cooked.
  5. Once cooked, remove from the grill and enjoy.
